Drying a finished kitchen without a fan count

Water got into a finished kitchen with hardwood floors and an island. The house was occupied, so the contents stayed and we worked around them. We pulled the stools and put air movers at the perimeter and on the island, where the water had actually gone, and we ran a dehumidifier on the floor.

A fan count tells you nothing about the floor. The checks do. Daily readings told us when the floor and the cabinets were really dry, and that is when the finishes were decided, not on a date someone picked at the start.
